Delicious & Nutritious Garbanzo Bean Burger and Homemade Fries

Tonight for dinner, I was feeling like some finger food. I noticed I had some garbanzo beans left over from when I roasted them (roasted garbanzo bean recipe will be up soon!) and wanted to use them up. You can also use a can or two of garbanzo beans, each can probably yields 4 patties, made 2.5 inches round and an inch thick. They’re pretty hearty. I also had some quinoa left over from lunch, and made a half a cup of rice, the magical element of these burgers. I’ve made this recipe before, without the rice, and they would not stay together, so the rice really helps keep it whole.

Please feel free to add anything else you think would be tasty. I barely ever follow a recipe without tweaking it somehow, so please use this as your canvas and have fun with spices, beans, and grains!

Garbanzo Bean Burger:
2 cups of garbanzo beans
1/4 cup of brown rice, cooked
1/4 cup of quinoa
1 egg
1/2 cup oil
1 tsp onion powder
1 tsp garlic powder
1 tsp of paprika
1/2 tsp of cayenne pepper
1 tbsp matzo meal or bread crumbs

Preheat oven to 375 degrees.

In a food processor, pulse together beans, rice and quinoa. Remove mixture and place in a large bowl, add egg, spices, oil, matzo meal or bread crumbs and mix together until it seems like you can form a patty. If it seems too dry, gradually add more oil. I put the batter in the fridge to cool, but you don’t have to. You can make smaller patties than I did, just make sure they are all about the same size so they will cook evenly. Place them on a tray and in the oven for 30 minutes or until crispy on outside and moist on inside.

One of the best things about these burgers is that you can make the batter the night before, the morning, anytime. Then, all you’ll have to do is cook them when youre ready to eat. Also, if you don’t want to use the whole batter, you can put it in the fridge and use in the next few days!

DebuTips:
Add different spices. Perhaps, youre in the mood for Indian food, add curry. Or Mediterranean, add cumin and turmeric.
Try a different bean, maybe you have black beans in the pantry? That’ll work too!
Dice some sweet bell pepper for added flavor and color.

Homemade French Fries:
2-4 potatoes of your choice
3 tbsp of oil
Salt & pepper, to taste
Garlic (optional)

Preheat oven to 375 degrees.

Peel and slice potato down the long way, and slice each half along the diagonal. Cut to your desired shape and width. In a large bowl, add oil and spices and mix together. Spray cookie sheet with cooking spray and bake in oven for 30 minutes. Mid way through, turn slices over, to get an even crisp on both sides.

Add a little ketchup,  mustard,pickles and veggies  and you’re all set to go!
